#OnceUponAKenyanTime

It was a trending topic yesterday and it got me thinking of all the things that made my childhood the best childhood ever. From the cartoons (looney toons, saber rider, road runner, sonic the hedge hog, Denver, sky dancers, captain planet, anamaniacs, lion king e.t.c), to the snacks (goodie goodie’s, super snack, crunchie, ball gums, kashata’s e.t.c), the programmes (fresh prince, full house, martin, derrik, sunset beach, sister sister, seventh heaven, Tausi, Tahamaki, club kiboko lol e.t.c. ), the games (shake, rounders, brikicho ‘hide-n-seek’, cha mama, scrambo e.t.c) that kept me outside till dark when the house-help comes looking for you to go take a bath (that bit wasn’t fun). There was the music ( brandy, 3T’s, Monica, soul for real, sisqo, DMX, Ja-Rule, Bow Wow childhood celebrity crush e.t.c). How we would do cut outs from the Sunday paper on exercise books to get the lyrics so that we can sing-along when their songs are playing. Growing up in the 90′s was just it. There was so much time to do out door things especially as kids. I think it gave us so much room for development (both mental and physical). We had time to have socialize with neighbors and have fun while at it. Now? I don’t even know who my neighbors are and I don’t see me getting to know them any time soon.

It was the era between non-technology and technology. Technology has changed things I tell you. From the great wall black and white  T.V’s to colored now digital / L.E.D /3D TV’s. Cartoons are now more than ever complicated, they force the kid to grow up so fast. Games are even worse (from the simple brick game and adventure / fighting games (super mario, tekken, street fighter and so on) – now we’re on simulators for games). I am just wondering in the next say 30 years how life will be? There will be a gadget for doing everything. You will basically need to do nothing. Currently everyone is working on making life extra ordinarily easier. I can bet people may eventually end up not knowing each other offline.

Then there are just those things that were the best at taking “pain” away. Especially if you’re feeling unwell. You know kids,  they get sick every so often. Then your mum very appropriately asks you, “*insert home name*, what do you want to eat today?”. I would really like to know what some of your responses were. Mine was always an automatic, “FRIES and SAUSAGE”. I mean, I didn’t even have to think about it. Sometimes that would even make me forget that I was actually sick when the excitement checks in. But you know, you have to maintain your sick act or else the next day you’ll be up in the morning preparing for school…lol (that preparing for school in the morning part wasn’t fun. I remember there was a time I was so sleepy after the help woke me up, and instead of going to bathe I went ahead to sleep in the bath tub and she didn’t notice, my mother wasn’t amused ha ha. It’s never been repeated).

This previous Easter weekend, in the midst of all the moving we decided to make home fries. Best decision since I genuinely love home fries. Home-made fries can make me happy any day, any time as the taste is … oh so delish. So we started the preparations of making home fries. I was the one doing the potato peeling, then the boyfriend took over and made the chips slices. Talk of someone who complements your weaknesses. Yes, making chips slices is not my forte.

Then somehow, he’s the one who took over the rest of the frying. I was not allowed to comment on anything and when I started “won’t they burn”, “isn’t the heat too much” … I was shoo’ed off the kitchen. Some sausages were added to complete the meal. Plus what’s a meal without chilled ribena. I was in heaven for a moment, that’s redefined yumminess. It was nostalgic. Just that this time we’re the one’s making them. At least no one was sick and the following day was work day, no excuse for not waking up early.

Well, thanks to technology, in future I intend to get a potato peeler, a potato cutter (you know the ones that help you cut potato into chips) and a chips maker. This will eliminate the effort used to make this meal. But are they all necessary really? They make work easier yes, but don’t they spoil all the fun involved? We had fun prepping this home-made fries and the effort made them even taste better. What’s your take though?

I wonder what the “cure meal” for kids nowadays is?

Foodie Moment

I hope my Kenyan friends who are of age went to exercise their democratic right by electing their political aspirant of choice. As we wait for the vote results, we hope that they’ll be free and fair seeing as there are some challenges the IEBC is experiencing. Well, at least we were given a week off by our office to observe the election process. It’s interesting because we get to rest while at the same time touch base on what’s happening. in the mean time, let’s try to say and think good things about IEBC to promote peace despite the speculations going around. Not easy for me either, but I’m pretty sure they’re trying their best.

That’s what I’ve been really up to. Feels like a leave of sorts. Have some thesis work and assignments that were due this week but have been pushed to next week as well so you can imagine the amount of laziness that’s creeped in. It’s amidst my laziness that I thought to share with you things that really tickled my fancy this week. That’s with regard to food. Say with me “a moment on the lips, a life time on the hips”. But then again, what’s life without some good food?

Favourite meal: Chicken and plain boiled rice

I’m not one to write the recipes really but let me try my hand at it.

Ingredients: One cup of Rice, handful of boiled peas, 1 spoon salt, 1 spoon garlic powder, 1 spoon mixed spices, sprinkle of royco, 1/2kg chicken, 2 green pepper(sliced), 1 batch of dhania, 2 tomatoes (diced), 1 onion (diced), one tumbler of water, 5ml cooking oil (sunflower).

Method:

For the rice, basically measure one cup of rice, wash it. Then measure two cups of water and boil it. Pour some little oil and a spoon of salt. Pour the washed rice into the boiling water and let it cook in medium heat until the water falls. Mix the rice with boiled peas and let it simmer.

For the chicken stew, I do a fake marination of the chicken with the spices for a few minutes. Then my first step (for nearly all stew meals) is always fry the onions and green pepper in a little cooking oil. I think it’s just a habit picked up while observing how my mum cooked. Tried other methods, but this one has stuck. Then pour in the 1/2kg chicken and let it cook a little then add some water and simmer. As it cooks, add diced tomatoes, dhania and some peas then let them cook and melt into the stew. Add a pinch or two of salt to taste.

Serve the rice and chicken stew while hot. The arrangement of the food on the plate doesn’t quite matter for me at least, unless you’re trying to please someone. LOL I hope my boyfriend doesn’t see that, he might subject me to decorating his food. YUMMERS! That happens to be one of my favourite fast cook foods. I think one hour and am done if not less. As long as the white meat is ready.

Favourite snacks: Urban bites/pringles, corn chips (aka choose), ribena/can of redd’s.

I don’t have any particular crave at the moment, but it looks like my palette is tending towards salty stuff (crisps and chips) with a sweet beverage accompaniment.

Favourite Dessert: Ice-cream and cookies

I’d mentioned that I’d love to try the different Igloo flavors, this time I went for vanilla (it’s undoubtedly my favourite). As simple as it gets. We should go a bit wild on the flavours next time.

Ha ha just in case you’re wondering where it all goes … the sewer system works pretty fine. Did I just spoil my whole post with this. I’m starting to skip as an exercise regime (even bought a skipping rope) and dragging the boyfriend on that plan. Healthy living people, healthy living. Eat then exercise a little. No?

Licensed to Pan!

When I was a kid I used to say, when I grow up, I want to be a “Chief Chef” … and you can imagine how I used to say it, considering it’s a tongue twister. Then I said a doctor, and did the whole hospital act with my toys, then to “I’m not sure” and so I just went along with the opportunities and my path ain’t that bad off :p, but has nothing to do with the above. Technical, non-technical, creative *somewhere there*…lol

Cooking has never been my forte, but I do cook and, “I think highly of my cooking”, says my alter ego. Now that I live alone, a girl has got to survive, and out of boredom I end up taking pics of the meals I prepare. So that they don’t go to waste, I though maybe I should do a blog post on them and maybe it will say a little more about me. I’m a bit of a cliché right now … I cook the same things, but with time I’m gonna start going wild with food very soon.

I’m a sucker for eating healthy … well, somehow! Veggies are a necessity not a choice. If all else ever fails … food might be my fall back #jk . Maybe I will start a show called “Licensed to Pan” —-> A copycat of “Licensed to Grill on BET” … hehe! Then I’ll upgrade to grilling, then oven … I’m so green in those, maybe I’ll do bakery classes … because can’t bake a cake to save my life…lol

Here goes just but a few of the meals I have cooked and a little something about them:

This is what I ate for dinner the very first day I moved out. It amazes me that even with all the exhaustion I still went ahead and prepared something to eat. A piece of chicken which I must have packed from home, with soya chunks and spaghetti! Soya chunks are pretty delicious if fried well, then I dropped the piece of chicken in it and it made a perfect meal. It was more like a quickie meal.

To my favorite meal … Rice, chicken stew and greens any day! I could this every other day but that wouldn’t be healthy so I indulge at least once a week :)

Mushed Potatoes (with some milk and butter), minced meat and mixed veggies (Cauliflower, butter *somthing*, purple cabbage, carrots, French beans) … The first time I did the mixed veggies I thought I was nuts, because I used to be anti-such-vegetables, but now I’m cooking them … I bet my mum will be over the roof if she see’s this.

Pasta (made with tomato paste), minced meat and mixed veggies (cabbages, French beans, tomatoes, grated carrots) … I got myself a divided plate because of my bad habit of mixing up food … so in an aim to try and be decent … it still does make a difference one portion finds itself filled with the contents of the other portion #ifthatmakessense

Pan fried skinned chicken strips with pili pili hoho a.k.a green bell peppers … I used to love the chicken skin until I figured how much fat they hold especially the ones injected with steroids…jeez! Fried them once and threw them, from then on, if it’s not Kienyeji, I skin! And pan is the next Kawi thing. Waah! This is like the most delicious snack, it was nearly over even before I emptied it to the dish.

Pan fried steak with sliced  pili pili hoho and tomatoes. Oh well, I tried but I had just defrosted the meat so it was all juicy and I wanted it dry but as long as it cooked and was edible, it was like panned stew…lol. Next time, i’ll defrost it and dry it before pan frying and not put tomatoes, that could be the source of all the juice … lesson learnt. Tomatoes will go to the salad.

This is also known as my lazy meal … I do this when I’m very exhausted and I have left overs. This is a mixture of rice, scrambled eggs and greens. To be honest, this is like the most delicious meal … like the finger licking, plate licking kind not cause it’s the best meal ever but because you’re so hungry and so lazy that you don’t have a choice but to enjoy what the fridge has to offer.

What I would love to make, but that means that I need to get a grill or something of that nature … my current obsession!

Pork Chops! Yummmmm! I don’t like fries that much, the attention here is the honey glazed pork chops *salivating* the day I’ll prepare pork chops this good, I’ll be inviting people over for dinner every so often, just to show off :p
